Lovely BreakfastI don't eat wheat and mostly avoid oats; i am also losing weight,  so ordinary breakfasts aren't suitable.  If you have been diagnosed with diabetes, coeliac disease, high cholesterol or just waking up to the fact that wheat or dairy just don't agree with you and  has left you wondering what to have for breakfast I am going use this page to share my ideas and log what I have for breakfast every time i make something different that i think you might enjoy.= - and will be adding other people's contributions.

 

My breakfasts now are easily my favourite meal, i enjoy them far more than I ever did cooked breakfast, cereals or yoghurt; I really look forward to it. 

Breakfasts vary during the seasons and depends on what I have available.  I don't have much time  nor do I  cook in the conventional sense and usually don't think much about it before hand so all is quick and easy.  I never weigh food so everything is added by eye, a handful, a shake, a sprinkle, a smidge which means these are ideas rather than recipes so you can experiment  to get them just the way you like.

            24th August

Simple Golden Linseed with Fresh Lime and Sea Buckthorn  (if you can't find the latter use any acid or  sour fruit juices or combination) Place Flax Farm golden linseed meal in a bowl pour a shot of the sour juices, diluted to taste if required with boiled water, add sweetener to taste anad a teaspoon of lecithin. (Optional)   Especially if made with sour cherry juice this would be an ideal breakfast for anyone with joint problems or gout. And most importantly, it makes a (very quick) lovely breakfast.

             23rd August

Golden Mashed Banana with Lime and Sea Buckthorn -(or Golden Banana and Sea Buckthorn Linseed Fool).  Heston Blumenthal's Wiatrose recipe for a banana Eton Mess inspired me - but I will leave all that cream, meringue and caramel to others ; this version is far healthier and i think 20 mins after eating it, nicer too!.  My breakfast version was 1 banana, 1/2 juice of a lime, a tablespoon of pure sea buckthorn juice (if you can't use any other sharp fruit juice or puree as an alternative), two dessertspoons golden linseed emal, a sprinkle sweetener, 1 teaspoon lecithin, all mashed and stirred until smoothish.  It was really gorgeous rich dark yellow, lik epure yelllow paint just lovely and Sea Buckthorn never tasted so good, in fact it tasted so good it didn't really taste like Sea buckthorn...much, much nicer!  AIt is another Pud possible, serve with ice-cream, meringe, flaxjacks,  or just in a glass as a fool.

             18th  August 

Pineapple and Blueberry Linseed Muesli.  1 small slice of pineapple finely chopped, a tablespoon frozen blueberries defrosted with 1/2 cup boiling water, 1 dessert spoon each pumpkin and sunflower seeds, 2 heaped dessert-spoons golden linseed meal and a teaspoon lecithin granules, all stirred up quickly.  It's rather an astonishing colour combination but tastes fresh and gorgeous. It would be good with apple instead of pineapple.

             16th August

Very naughty, 2 cakes!!!! i was in a rush so just grabbed a raspberry and a gooey date Flaxjack. On the plus side there's no gluten in them, no animal fat but there is sugar and coconut oil.  However I felt a lot better than if I had eaten an oat bar or any other cake and of course none of the side-effects of wheat - and it kept me from feeling hungry all morning.

             15th August

Rhubarb Porridge.  The rain has  made the rhubarb grow again and there are masses a slim pink stems, i cooked a few up in water, they went soft really quickly and whilst they were still warm transferred a large helping to a bowl, added lecithin granules, sweetener and a good handful gold linseed meal, and added sunflower seeds and stirred. As ever it was heaven (though I think rhubarb has a better flavour in spring).

             28th July

A golden breakfast of grapefruit and pineapple with sunflower seeds and golden linseed. I put 2 heaped dessertspoon ground golden linseed into a bowl, added the same amount of roughly ground sunflower seeds, a dice slice of fresh pineapple and the segments and juice of half a pink grapefruit and sprinkled a teaspoon of lecithin granules. It taes wonderful and looks golden and gorgeous The pineapple is really ripe and the grapefruit juicy. A bit like a golden Eton mess pudding but without the sugar and cream – and actually far, far nicer.- mark this one down a a good pudding! Who wants sugar and cream when healthy wholefood can taste this good?

29th: have the above with raspberries (only some frozen ones thawed out) instead of the pineapple and was amazed how well grapefruit went with them and once more a lovely breakfast and feeling well set up for the day.

 

             13th July

Market Muesli. Borough Market - where I have a stall is a wonderful source of lovely ingredients and there are some brilliant fruit and veg stalls I usually pick up something nice for my breakfasts. This week my muesli has been two dessertspoons of a 50/50 mix of bronze and gold linseed meal, a small handful each of whole linseeds, pumpkin and sunflower seeds; a dessert spoon quinoa flakes, ½ a grated white carrot, some white currants, a small handful Lexia raisins moistened with juice or banana milk (banana with a squeeze of lemon and a spoonful golden linseed meal whizzed up in a glass of water) and some goji berries. It looks magic. tastes great but needs thorough chewing!

             8th July 

Chocolate Porridge.  I made a strong cup of cocoa from some of the expensive Willie someone's cooking chocolate that cost a small fortune in Waitrose -  any cocoa powder made up would have been nearly as good - poured it into a bowl, added three dessertspoons mixed ground bronze and gold linseed meal. a teaspoon lecithin and some sweetener stirred, and topped with fresh raspberries (from the garden - what a treat!) and some sunflower seeds. It was good but more like a dessert than a breakfast but that doesn't  i wont have it again when i need an early chocolate fix. MAde with cocoa powder is probably healthier because it is lower in fat.

             6th July

Grapefruit and melon.  I chopped up a decent sized slice of one of the best honeydew melons i have had;it was also one of the cheapest  cheapest as it looked a bit blotchy and the market stall was selling them for pence; i added 1/2 a red grapefruit cut into segments plus two dessert spoons  mixed gold and bronze linseed, 1 teaspoon lecithin (which isn't essential) some sweetener and a few sunflower seeds.  It was another of so good it is hard to imagine a better breakfast.

             23rd June

FRY-UP!!!   Last night i didnt have any supper so sat down to a goodly but healthy  fry-up; I sort of steam-stir-fried some mushrooms in a non-stick pan with a couple of tablespoons veggie stock made up quite strong stock, added some chervil, then griddled some tomatoes on another pan - all to save on added fat,  than as I planned to "treat myself" to bacon  grilled a  slice of very thin lean bacon - i wish it had been a slice of tofu... but can't find any good stuff here.  Then made some bread from 1 egg, mixed with two tablespoons Flax Farm mixed bronze and  golden linseed meal, 1 small teaspoon baking powder, a smidge of salt and bunged the mix in muffin shaped container and microwaved for two mins.  Had that to sop up juices of toms and mushies. The bacon was superfluous but a real and healthy cooked breakfast - a power breakfast at that!

            20th June

Strawberry and peach, soya and linseed smoothie:  I was brought up by my mother, who had been through the hardships of the war,  not to waste food, so i am quite happy salvaging what can be from fruit that's past its best.  I  put a small punnet of rather past their best strawberries (whole  with green bits left on) a well bast its best (if it ever had one...) peach with stone removed, a glass of soya milk a good handful Flax Farm ground linseed meal, a teaspoon of lecithin, a little shake of sweetener and whizzed it up in my blender, it was thick, soft and fruity and far better than the sum of its somewhat indifferent fruity parts. smiley

           18th June  

Roni's Breakfast.  Roni is the most incredibly elegant lady and has very elegant breakfasts.   Today's breakfast is typical of what she has every day and keeps her slim and fit.   3 tablespoons gold linseed meal  sprinkled with a chopped slice of pineapple and its juice,   topped with a tablespoon each of raspberries and blueberries and topped with yoghurt/soya yoghurt; i know it tasted great and looked good enough to be on a magazine covert.

           15th June

Apricots with Bronze Linseed; last night (a bit of brilliant forward planning there!)  I cooked some cheap apricots in plenty of water, they went soft and the water gloopy.  This morning they were cold.  i put two cooked apricots and some of the thick juice in a bowl, added two heaped dessertspoons of Flax Farm bronze meal into a bowl, added a merest sprinkle of "Splenda", a teaspoon lecithin granules and gave it a good stir, the apricots broke up a bit but stayed in distinct pieces.   Well the result was:....probably one of the best breakfasts i have ever had.  The flavour was  brilliant; the nuttiness of the bronze linseed meal went really well with the rich, gorgeous apricots (and the lecithin just helped link the flavours) , the texture was amazing silky, slithery, gloopy and nutty all at the same time.  Wow, yum! etc, etc!  If you like apricots take advantage of the fresh ones in the shops at the moment - or use tinned (at a pinch) or resuscitated and cooked dried apricots.

After a food of the Gods' breakfast like that - which would make a divine (though rather brown) dessert porridge and other breakfast cereals seem like a third world survival ration.

          13th June

Mashed banana with bronze linseed meal.  This is very quick and easy and filly - and NICE!!!  Just mash a banana into a pile of 2-3 heaped dessert spoons linseed (about 1.5  ounces or 20 g) mash it all up - i put in a teaspoon lecithin - i have no idea if it helps lose weight or lower cholesterol but i like the taste)  It is amazingly good.

11th June

Raspberry Linseed Porridge with apricot. Using up the frozen raspberries again; i defrosted a good handful in the microwave and when warm added a a similar volume of boiling water. Then stirred in two heaped dessertspoons golden linseed and stirred it up, it went like a thickish porridge and topped it with a cooked apricot: utterly sublime - i don't think i have eaten a dessert that tasted better - and even felt really substantial even though it was low in carbs/low GI/low glycemic load.


9th June

Melon Muesli. 1 slice honeydew melon diced, 1/3 apple and the same amount of carrot finely chopped/grated, a good handful of mixed seeds and dried fruit, gogi berries, 1 tsp lecithin and 3 dessert spoons ground golden linseed stirred together with a good squeeze of orange juice.  Verdict: very pleasant - a lot better than ordinary muesli - and will probably have the same for breakfast tomorrow

7th June

Rhubarb and Raspberries.  I poured (i keep my ground linseed in a jug in the fridge)  good handful, about 3 heaped dessert spoons Flax Farm ground linseed meal into a bowl, added a good helping of cold cooked rhubarb, a teaspoon of lecithin granules, a good sprinkle of Splenda (artificial sweetener). Then tried to defrost some raspberries (they need using up before the ones in the garden are ready)  in the microwave, unfortunately it was on the highest setting and they were  really hot and just a thick lumpy red mush.  Poured the red mush over rhubarb, which was a good thing because it all warmed it a bit, and then gave it a good stir.  It was just wonderful, lovely silky texture, lovely little bursts of raspberry flavour and colour.

Plenty of protein, loads of fibre. Very low carb, low GI, low glycemic load, and the only fat was good fats mainly good omega-3.
