A porridge of linseed, apples and berries (grain-free)

These lovely ingredients mix up to make a lovely thick but light hot breakfast, just right for warming you up on a winter's morning but I enjoy it all through the year. Being cereal-free and free from refined carbs it is a suitable breakfast for a diabetic or weigh-loss diet as very low GI.

Ingredients
  

  • 1 Small apple I prefer apples.
  • 50-75 g berries I use frozen through winter and fresh in summer
  • 20-25 g Flax Farm Gold Ground Linseed (flax) bronze is just as good
  • 25 g chopped nuts chopped
  • 1-2 tsp grated fresh ginger optional, you can use dried ginger but much less
  • sweetener to taste optional - I use stevia extract
  • 1 tsp honey optional
  • 1-3 tsp Flax Farm cold-pressed linseed oil optional
  • 150-200 ml Water

Instructions
 

  • Core and roughly chop apple, don't remove peel. Almost cover with water in suitable bowl or container.

  • Cook, in oven in saucepan or microwave until the apple is soft and cooked. About 4 minutes in microwave 10 minutes in sauce pan or 10 in oven.

  • Remove from heat, add grated ginger if using and any other spices and whatever you are using for sweetening. And stir through the cooked apple.
  • Now add ground linseed, linseed oil if using, and stir again. Top with berries, chopped nuts and drizzle over a teaspoon of honey.
  • Now enjoy.
