Banana, Berries and Linseed Semifreddo "Ice Cream" (sugar-free)

Ingredients
  

  • 1 medium banana
  • Berries, fresh or frozen Similar volume as the banana
  • 2-3 teaspoons Flax Farm cold-pressed linseed oil
  • 2 dessertspoons Flax Farm Gold Ground Linseed
  • 16 Drops Stevia Liquid or sweetener of choice As Sold on Flax Farm Shop https://www.flaxfarm.co.uk/product-category/other-food-products/
  • A few Drops vanilla extract
  • 1-2 Teaspoons raw honey, yacon syrup, or similar optional

Method
 

  1. Place banana in freezer until frozen or if using frozen berries it's best to have the banana only half frozen.
    Banana, berry and linseed ice cream. Healthy, omega-3, lower GI, no added sugar and delicious.
  2. Place all ingredients into a blender and whiz until smooth. Adjust sweetener to taste. Leave a few minutes for ground linseed to thicken and serve. It can be made a short while before the meal and frozen until required. If serving from fully frozen allow to come round a little before serving.
