Johanna Budwig
Johanna Budwig (1908–2003) was a German biochemist, pharmacist, and nutrition researcher renowned for her pioneering work on the health effects of fats and oils. Her development of the “Oil-Protein Diet,” better known as the Budwig Diet, made her one of the most influential alternative nutrition figures of the 20th century. Early life and education
Budwig trained as a pharmacist and earned doctorates in physics and chemistry before joining Germany’s Federal Institute for Fat Research in the early 1950s. Under the mentorship of Prof. Hans-Paul Kaufmann, she investigated the chemical differentiation of fatty acids and became head of the institute’s department for pharmaceutical fats.
The Oil-Protein Diet
In the late 1940s and 1950s, Budwig devised a nutritional protocol combining flaxseed oil (rich in omega-3 fatty acids) with quark or cottage cheese to improve fat metabolism. She hypothesized that such combinations restored the body’s “electron-rich” lipids, essential for cellular respiration and regeneration. The Budwig Diet emphasized natural, unprocessed foods and excluded refined fats, meats, and preservatives.
Influence and legacy
Budwig’s ideas—though controversial in mainstream medicine—helped shape early understanding of unsaturated fats and their role in cardiovascular and metabolic health. She published multiple books, including Flax Oil as a True Aid Against Arthritis, Heart Infarction, Cancer, and Other Diseases and The Oil-Protein Diet Cookbook. Modern interest in omega-3 fatty acids and cold-pressed linseed oil owes much to her groundwork.
Later years and continuing impact
Budwig continued lecturing and treating patients into the 1990s. Centers in Germany, such as the 3E-Center in Remshalden-Buoch, still apply her dietary principles. The Dr. Johanna Budwig Foundation and product line promote her research on healthy oils and nutritional self-healing today.
