Zesty, Seedy Breakfast/Dessert Bowl with Lime – vegan and paleo

There are some lovely unwaxed limes in shops now and I love lime, especially added to fresh ginger and  other fruits such as orange or papaya.  I don’t use milk and don’t like the alternative “milks” when I read about how they are made, so a simpler breakfast of fruit and seeds seems a better idea.  As I am not a fan of oats for every every day it is also cereal-free, no oats even, so gluten-free and with plenty of ground linseed it’s a good breakfast for a healthy digestion.   The cold-pressed Flax Farm Linseed Oil adds richness and lots of healthy omega-3.  This breakfast tastes fresh and fabulous. Of course you can adapt it to the fruits, seeds and nuts you have to hand.

Ingredients
  

  • 1 teaspoon Small Banana
  • 1 lime, preferably unwaxed and organic
  • 1 tangerine, satsuma or similar or other fruit such as sliced kiwi or papaya
  • 1 heaped dessertspoon Flax Farm Ground Linseed (Flaxseed)
  • 1-2 teaspoons Flax Farm Co
  • 1 heaped dessertspoon mixed seeds - sunflower, pumpkin, chia or chopped nuts
  • 1/2 - 1 teaspoon grated fresh ginger
  • sweetener to taste
  • 1 teaspoon raw honey, yacon syrup, coconut blossom nectar, or similar optional

Instructions
 

  • Slice banana into a bowl.
  • Sprinkle over ground linseed and other seeds or chopped nuts. Grate the zest of the lime over this.
  • Add tangerine segments or other sliced fruit
  • Squeeze lime juice into a small bowl, add grated ginger and sweeten to taste with stevia or similar. Add linseed oil and pour over fruit and seeds.
  • Drizzle over with honey or other if using, give it a stir and enjoy.
