Gluten-Free Blueberry & Lemon Cake with Flax Porridge
Flax-porridge gives this cake a deliciously substantial, moist texture, while the blueberries are luscious and fresh lemon keeps it bright and fruity. It’s quick to make, real wholefood ingredients, and a lovely way to add more flax to your baking.
We find Flaxseed Porridge works brilliantly as an ingredient in cakes. It is made with two types of ground flax and wholegrain rolled oats and makes a tasty satisfying alternative to ordinary wheat flour. It brings low GI, fibre and omega-3 naturally to your baking.

Credit to Waitrose for giving us the idea but their version used flour and we need to have gluten-free cakes here. We really like the texture of cakes made with Flax porridge – and we like how easy it is to use. A bonus of using Flax Porridge is, it’s full of heart-healthy omega-3 and betaglucans, digestion-supporting fibre, soluble fibre and lots of antioxidant lignans. Whilst giving you better nutrition, it’s got 20% less butter and 20% less sugar, and a much lower glycaemic index; which has is all good.


Gluten-Free Blueberry & Lemon Cake with Flax Porridge
Ingredients
Method
- Grease 8-inch/20-cm loose-bottomed cake tin, and line with baking parchment. Or other well lined tin/dish of similar size will also work.
- Preheat oven to 180C
- Finely zest the lemon, then squeeze the juice into a separate container and set aside
- Put the softened butter and 140g sugar into a mixing bowl. Beat together thoroughly until well combined. Beat in the eggs one at a time, followed by the vanilla extract and lemon zest.
- Shortly before the cake comes out of the oven, gently warm the lemon juice with 2 tablespoons of sugar in a small saucepan. Stir until the sugar has dissolved.
- Pour the warm lemon mixture over the cake while it is still hot. Leave to cool to room temperature before removing it from the tin and serving.

Serving Suggestions
Flax Porridge gives this cake a slightly more substantial, succulent texture than a conventional sponge, making it especially good for a coffee break, teatime or dessert. It is delicious on its own, but you can also serve it with whipped cream, ice cream or Budwig cream made by blending 100g strained fat-free Greek yoghurt with 50ml Flax Farm cold-pressed flaxseed oil - the healthy saturated-fat free choice - or whipped cream or ice-cream are also lovely with the cake but a bit less healthy.More about the benefits of flax
